I spent 40 dollars and purchased a cast iron skillet just for this recipe and I think it only made the dish even better. Using the skillet for everything now. worth every penny. This was amazing. People look at me and say ” I don’t eat thighs”. You will if you try this. I absolutely love this recipe! I’ve made it 3 or 4 times in the last month. Made this recipe twice already. My family loved it! Made it with a side of pasta and rice. Added red pepper flakes on top for spice. My daughter typically doesn’t like the taste of lemons, so I was a little worried that she wouldn’t like it. She ended up gobbling it up and did her happy dance! My husband couldn’t get enough of it either and went back for thirds. I served it diced up and on fettucini, with a side of steamed broccoli. I would like to try with with chicken breasts like someone else did and take them out early. I love the how the thighs turned out and my hubby ate them but dark meat is not his favorite. It’s a great recipe. This chicken is truly delicious. I have made this recipe four or five times already it's definitely a keeper. It doesn't make much extra sauce so if you want some to scoop over potatoes or pasta you should double the sauce. Delicious and looked gorgeous served in a pineapple! I cut the sugar slightly and next time will try only putting in half the amount and possibly even omitting it altogether. But the recipe turned out great and the flavor and presentation was beautiful. I also sautéed onion with the red pepper. Can’t wait to make this again. I personally made this tonight and I bought the jar of sundried tomatoes in the oil. Used 1/2 a cup and just drained the oil out of the measuring cup before I added. Turned out great. I will make this again. I added onion to the sauce, and I think that is a must. Don't be dumb like me. Drain most of the oil from the pan before you start making the sauce. Next time, I'll add a touch more cheese to thicken the sauce a bit more. Overall, very good. I added mushrooms and peas after precookong potatoes, Chef Prudhomme spice to chicken breasts which I butterflied and nestled, and used a Parmesan petal mixture with three Italian cheeses for the final step. It was awesome. Wish I could share the photo. I fried the chicken cubes for 5 mins with the fresh garlic and a little olive oil, set aside and the juices that came off the chicken I then added to my Tupperware container with raw small pieces of cauliflower which I tossed around.
